A Divine, Dairy-Free Pumpkin-Spice Latte

Coconut milk, pumpkin spice latte

It’s the palm shortening!  Coconut milk is great.  So is coconut cream.  But don’t you notice in your coffee it all might as well be coconut water?  Let’s face it.  We miss cream.  Maybe even the carrageenan found in International Delight’s French Vanilla.  What else is in there anyway!  When I read the label on the International Delight bottle, guess what I found!  “Palm oil.”  I CAN DO THAT!

I suggest not skimping on the palm shortening, as it provides the creaminess and texture that I’ve been missing with just coconut milk and coconut cream.  This is a real treat, so make it taste like one.  Or two.

This can be a coffee treat for adults.  Or a steamer for kids (or those who shun coffee).  I know there are other recipes out there like this, made without dairy but still using “PURE, HONEST” ingredients!  Do you make one?  Could you leave your “concoction outline” in the comments section?

Rich, Creamy Pumpkin Spice Latte

Makes 3-4 servings

4 generous tablespoons of palm shortening (here is sustainable palm shortening)
3/4 cup of full fat coconut milk  (here is one with no guar gum and no BPA)
1/2 cup of mashed, plain pumpkin (I used canned) (here is organic pumpkin)
1 teaspoon of vanilla
2 teaspoons of pumpkin pie spice
4 tablespoons of maple syrup or honey, adjusted for personal taste

Melt the palm shortening.  While it is melting, place all of the other ingredients in a blender.  Add the melted palm shortening.  Blend until well mixed.  Place in storage container and store in fridge until ready to use.  It will turn hard when refrigerated.

When you are ready to make your latte, heat the pumpkin mixture up so your latte won’t be cold.  I use 1/2 cup very strong brewed coffee to 1/2 cup of pumpkin mixture.  The mixture, for me, could not stand up alone as just a creamer.

For a steamer, heat up your desired amount and dilute to taste with coconut milk.

Taste and enjoy!  If it is not creamy enough or sweet enough, this is easily remedied by a quick little splash of your favorite sweetener and/or a small dallop more of palm shortening.

I was knocked out by this.  The palm shortening really made all the difference in the latte.  I can walk by Starbucks with no pining.
